Sweet Potato Maca Soup

Yield: 6 servings

Ingredients

  • 4 medium sweet potatoes, diced
  • 1 medium yellow onion, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, grated
  • 2 TBSP avocado oil
  • 3 cups beef bone broth
  • 1 cup full-fat coconut milk
  • 2 TBSP raw maca root powder
  • 1 tsp ground (or fresh) ginger
  • 1/2 tsp ground cumin
  • 1/2 tsp ground cinnamon
  • Salt and pepper to taste

Instructions

  1. Heat avocado oil in a large pot over medium heat. Add the onion, celery and garlic and sauté until fragrant and translucent.
  2. Add the cubed sweet potatoes to the pot and stir well to combine with the onion mixture.
  3. Add the ginger, cumin, cinnamon, maca powder, salt, and pepper over the sweet potatoes. Stir to coat the potatoes evenly with the spices.
  4. Pour the bone broth and coconut milk into the pot and bring to a boil. Once boiling, reduce the heat to low and let the soup simmer for about 20-25 minutes or until the sweet potatoes are tender.
  5. Once the sweet potatoes are fully cooked, use an immersion blender or transfer the soup to a blender and blend until smooth and creamy.
  6. Return the soup to the pot and heat it over low heat for a few more minutes, stirring occasionally.
  7. Serve hot.
